Whenever you fancy a snack or just want to munch on something healthy and easy to get, try this delicious and easy to make raw granola bar recipe.
Ingredients for 10 servings:
1 cup pitted dates
1/4 cup maple syrup or honey
1/4 cup peanut butter or almond butter
1 cup unsalted almonds roasted and chopped
1 1/2 cups rolled oats
You may also add chocolate chips, dried fruit, nuts, banana chips, etc.
Method:
Process dates in a food processor for about 1 minute. It should form a “dough” like consistency.
Warm honey and peanut butter in a small saucepan over low heat. Place oats, almonds and dates in a bowl, pour the honey and peanut butter over the oat mixture and then mix, breaking up the dates to disperse throughout.
Transfer to a small pan lined with parchment paper so they lift out easily.
Press down until uniformly flattened. Cover with parchment let set in fridge or freezer for 15-20 minutes to harden.
Remove the mixture from pan and cut it into 10 even bars. Store in an airtight container for up to a few days.
Ingredients
- 2 tbsp olive oil
- 2 tbsp fresh lime juice
- 2 tbsp mango chutney
- 1 tbsp low-sodium soy sauce
- 3/4 tsp grated peeled fresh ginger
- 4 oz skinless, boneless chicken-breast halves
- Cooking spray
- 8 cups mixed salad greens
- 1 cup diced peeled mango
- 3/4 cup diced peeled avocado
Mix oil, juice, soy sauce, chutney and ginger in a bowl. Put the chicken on a plate, coat with 2 tbsp oil mixture, reserving the rest for the salad. Let the chicken stand for 5 minutes, place it on the grill, which was coated with cooking spray. Grill until the meat is done, turning it on each side and brushing with oil mixture before turning. When chicken is cooked, slice it crosswise into strips.
Arrange greens, mango, and avocado in a large bowl, put the chicken strips over greens and drizzle the rest of dressing over salads.
